Grandma’s Banana Bread Muffins

Ingredients:

  • 1 cup white sugar
  • 1/2 cup salted butter
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 3 mashed ripe bananas
  • 2 cups unsifted all-purpose flour

Directions:

  1. Cream butter and sugar together, then slowly blend in all other ingredients until well combined.
  2. Pour the batter into a greased muffin tray or an 8-10″ loaf pan, spreading it evenly.
  3. Bake in a preheated oven at 365 degrees Fahrenheit for 45-60 minutes, or until a knife inserted into the center comes out clean.

This Mama’s secrets to the perfect banana bread? Adding an extra pinch of salt to the batter, which has a way of highlighting the natural sweetness of the bananas and creates a delightful balance of flavors. Sometimes a bit of demerara sugar crystals sprinkled over the muffin tops ad a nice extra crunch.  Either way, when it comes out of the oven, nothing can beat the aroma of freshly baked banana bread filling the air.  It’s the easiest treat to bake at night, perfect for waking up to at breakfast-time, and something Dad can never resist sneaking before bed if he catches it coming out of the oven!
